Use the Nightly packages:
http://wiki.apertium.org/wiki/Prerequisites_for_Debian

For your purpose, you can even install the language pairs from Nightly.
After enabling the Nightly repo, use "apt-cache search apertium" to see
what's available.

You only need APY from svn: http://wiki.apertium.org/wiki/APY
