I think you are right about the interview dates when dealing with a private
company.  It is best practice for organisations - particularly in public
sector and international jobs - to give at the point of advertising
vacancies all key dates eg application closing, long listing, shortlisting
and  timeframes of interviews so that candidates  are fully informed and
available for interviews before they apply. This normally takes the form of
language such as “interviews will be week commencing and will take place
via video / in person in Brisbane” etc.

I’m not even sure where the interviews are taking place. Is it all on
video? Or is it face to face? Does anyone know?

Im raising the point because it’s helpful for the community to have a sense
when we may hear something.

I think statistics of applications are really important to be provided not
least for  diversity and inclusion, equal opportunities as well as
transparency purposes.

It is everyone’s interest that this recruitment process goes well and being
open to the community can only send a positive signal.
