I'll second that. What is interesting is that if you tap the Project,
you see the position/fast add/add buttons at the top. You're basically
into Edit Project mode which is the equivalent to tapping a Task in a
search and getting into Edit Task mode. The difference is that
Projects (and Checklists) are two level structures.

One possibility is to replace the position/add fast/add buttons with a
Done button (or a Project/Checklist button) that would take the user
to the normal Edit Project page with all of the subtasks.

I think it's a reasonable trade-off (my opinion of course) to the loss
of immediate function. The only time it's less efficient is if the
user wants to find a Project and edit the Project itself. Then there's
an extra tap. But compare that to the alternative Pat describes where
you find a Project and then lose it again.
