Well you shouldn't have tasks that are overdue by several months. I
agree it is a bit tedious to set a due date well into the future (I
have one for Dec 2011).
You could just tap the "today" button on the calendar screen and you'd
be close enough given your apparent punctuality :-)
I don't know why you have to set the date to "none" and start again
but I've never had tasks more than a year past their due
date...tapping on the date field always brings up the calendar for me.
