Well, McIntosh and Delicious both end with sounds in the "s" family, so it sounds funny to add an "s". But I've heard people advertise "Macs", "Macouns", "Jonathans", "Spies", and lots of other types of apple in that form, so it doesn't sound at all weird to me to hear "Honeycrisps".
