IIRC, Shrink It (or at least some versions of it) can make compressed
disk images of 5.25" disks. As far as the programs aren't copy
protected, you should be able of making backups of them without problem.
I have found 3.5" disks to be more prone to failure than 5.25" disks, so
I'd make the backup in a hard drive or other mass storage medium. If you
don't have a hard drive connected to your Apple II, you can use a
Macintosh to read those disks (Apple uses a custom hardware format for
800 kb disks that makes PCs unable to read them no matter what software
you use).
