You can still get GS/OS 6.0.1 from apple.com

Just go to http://www.info.apple.com/support/oldersoftwarelist.html

Keep in mind, you'll generally need an older Mac with a built-in floppy drive with MacOS 8.x to make the compatible ProDOS floppies.

About a year ago I had started to put together a primer on making IIgs and II disks. I got about a third of the way through the instructions. I haven't given up, just finding the time to finish it off is hard. Anyway, I have put up what I had which will be fairly helpful.
