I assume the track width is determined by the head construction; but
they all look the same on the outside :-(

A 360K drive rotates at 300 rpm; a 1.2MB drive rotates at 360 rpm.

As far as the disks, themselves, go, *most* (not all) 360K floppies have a 
reinforcing ring around the spindle hole;  1.2MB floppies do not.
