I don't have exact stats on how widespread its usage is, but there are a
number of extensions listed on Github:

Some of these services are registered with the Foxx Apps
(https://github.com/arangodb/foxx-apps/tree/master/applications)
repository and hence show up in the services list in the web console.
I first used Foxx while building RecallGraph
(https://github.com/RecallGraph/RecallGraph), and I have found it to be
a flexible and powerful framework in which to develop testable,
non-trivial APIs.
My personal take is that it is still in its early days, but it is
already very useful and its adoption is on the rise. It is also
supported by good documentation and an active community at Slack.
