I have a 11th gen i3 A1 model laptop from OneXplayer. I've managed to get
the TUI rotated correctly (as these devices use phone screens so it's
portrait default under Linux) But despite what fbcon options I use, grub is
still rotated to the right. I've tried with video=efifb fbcon=rotate:1
and fbcon=rotate_all:1 as well as a few other options
under GRUB_CMDLINE_LINUX_DEFAULT. GRUB_CMDLINE_LINUX options have worked
for the CLI itself but not GRUB's GUI.

I did find this, which might be what gemini is pulling from
https://hackaday.io/project/203272/instructions, but I have no idea if it's
in the AUR at all or if this has since been added under a different option
or fork. I also have heard that REfind works for this as well but I'm not
familiar with it or how to switch bootloaders on an existing install if it
does come to that.
