Hi Angela, looking through the command line documentation, you can see an 
example of exporting to shapefiles here: 
https://github.com/archesproject/arches/wiki/Command-Line-Reference#export-examples

However, as you suggest, this export process references a postgis view (as 
opposed to a resource model UUID, for example) which suggests that some 
preparation must be made before creating a shapefile export. Hopefully 
others can chime in with more information about this, as I have not made 
shapefile exports from v4 personally.
