This is currently a short-coming in the display name function: you are unable to select which instance of a name to display based on a related node's value. However, I believe you can reorder the names as they appear in the resource editor and the top (or bottom, can't recall off the top of my head) one will be used for the function, once the resource is saved (at which time it should be reindexed). So that is at least a workaround for now...
If you have a few moments it would be really helpful if you could write up as a new issue on GitHub: https://github.com/archesproject/arches/issues. I think it would be a generally useful improvement to that function.
