Any computer based music production involves any or all of the following other than just composing and arranging.
1) Synth programming
2) Sampler programming
3) Rhythm programming
4) FX
5) Automation of the different components used in the signal path.
Each topic would merit a book of its own. I have seen few albums where even "looping" was considered additional programming.
I believe most of the "additional programming" credits fall under any of those above mentioned.
