In a related note, here is an interview by Klaus Bedalt, a hollywood composer on how he uses technology for composing. Although it centres around our Project Mix IO hardware (ofcourse, it is our marketing video) you can see how live, synth and sampled sounds are blended together.
All the tools are there just to make process simpler and may be provide some inspiration. Putting together bunch of canned loops is not composing even though it is a creative process.

AR uses a LOT of live guys. Specially Flutes – Naveen, Sarangi – Ust. Sultan Khan, Mohan Veena – Pt. Vishwamohan Bhatt and many many more. Every CD has the credits for every instrumentalist used. FL is pretty much an amature software. Not many pros using it.
About machines replacing humans... The sounds in the machines are nothing but sampled by humans itself. Like the Tabla's in the VSTi (Virtual Instrument) called Swar-Shala are all by Anindo Chatterjee – a very famous and credible tabla player. It is much faster to have a live person play everything though... rather than MIDI programming every beat/note/key.
Live is more fun to record too :)
