itunes offer AAC 256 bit rate audio which is far much superior than the normal MP3 encoding of the same bit rate. so, if you buy itunes plus music (instead of DRM protected 128 bit rate) you will get a near CD quality. but still, none of these can match the quality of CD.
it will all depend on where you listen to your songs. if you use an mp3 playr or ipod to listen to music most of the time, it's better to buy from itunes plus tracks because that is as good as it will get even if you convert music from a CD. If you use a cd player, by all means, buy CD.
