We used the employeeID field in AD also (at Webster Bank; I'm now at The Hartford). Again, it was the only field that had unique, non-changing data in it. (The consulting company we had help us with the original installation recommended the samaccountname field!)
The only problem we encountered were with users that weren't "employees"; mainly vendors. Temps and consultants would have a value in the employeeID field in AD (TMP123), so Remedy would pull them. Vendors would have to be added by hand, unless you gave them a value (ie: VDR123). Have fun!
