Okay we are now looking at all our options, so I realize that most of these options are going to be based on the business need rather then the technology. However now I need to provide the technological piece of the benefits and options.
So the basic options we have going now are (this is still rudimentary) :
1. Upgrade server to 7 and move ITSM 5.6 on to this server
Benefits : mostly 7x functionality, business impact is minimal. Ability to tie into CMDB 2.0 (even thought this might be a big exercise itself, and a lot of testing of 5.6 on approval 7 etc...)
2. Upgrade to 6.3 & ITSM 6
Benefits : smaller impact on user base then ITSM 7, CMDB 1.1, migration path from 5.6, and possible migration further on from 6 to 7.
3. Upgrade to 7 completely.
Benefits : one hop technology wise.
Can anyone add anything that they might think is worth exploring?

It will require that businesses using it change, to varying degrees, how they do business. It wil require retraining of the ITstaff and user base. It is NOT a normal upgrade compared to previous versions.
Which version of ITSM you should use is largely dependent on how ITIL compliant your company is or intends to be. If it's a lot, then you should consider it. If not, I don't know that I would recommend it at this time, due to the work involved in fixing something that may not, in the opinion of your company, be broken.

Has anyone put ITSM 7 in production yet? How long did it take you? We planned 6 months. We are just trying to do our testing, eval and have come across many issues and are having second thoughts. We are on ITSM 5.6 currently.
I've noticed a few things that might cause some grief for our users and admin's.
The shift just in processes for configuration of base system, CTI into product tiers and operational tiers, ticket submission for IN/PM/CHG, putting a CMDB to tie in properly. All the new roles, permission groups. It's almost a wholesale change for the product and we should just cut over.
We are looking at some different options now that include
