You may be oversimplifying...
I would use the Business-Time functionality, and add an escalation time
field to the form.
When the Planned Date is changed, you would use a filer an Bus-Time-xxx to
calculate the escalation time.
The escalation in itself would be very simple:
'escalation time' < $TIMESTAMP$)
If adding a field and using Business Time is not an option, it should be
possible to construct a fancy qualification that did this, but it would
certainly be complicated...
Yet another solution would be to have different escalations running on
different days of the week. Monday, and Tuesday, it is 3 days. Thursday
through Friday it is 5 days.
