Gary,
You'll have to use a REPLACE() function in an escalation to change xxxx
to yyyy.
The Run If of the escalation would be 'EMAIL' LIKE "[EMAIL PROTECTED]" and
the ST fields action would be a REPLACE($EMAIL$, "xxxx.com", "yyyy.com")

Once all of the xxxx.com's have been changed to yyyy.com the escalation
won't run again.
Then you can disable it and make a filter On Submit that does the same
in case old habits are hard to break.

**
If I wanted to use the Modify All function, and change several peoples
email addresses from [EMAIL PROTECTED] to [EMAIL PROTECTED], how
would I go about this ?

Thanks,
