The main difference between ITSM 5.5 and 5.6 is that in 5.6 field IDs have been corrected, there should be no field in the "customer/client" range (in a vanilla environment of course). Besides the correction of field IDs, there should also be a few workflow bug fixes (which I can't tell you what they are, it's been a long time)
So to answer your question: if your gap analysis is at the functional level, you should be OK working with 5.6.
