Forgot to tell you, after doing all that, in RKM I did the following:
Reset the cache, Reindex, then restarted TOMCAT (or whatever web server)

hmmm...so how does one remove the extra company values listed like My Company 
and manufacturer from the companies list?

surely others have had to deal with this.
