Of course, it must be stored in the db. Else how would the ARS server know
them?
 
Labels are view based.  That is: each view can have a different label for
the same field.  When a form is saved, if the default view changes, the
labels are subject to change.  This makes queries (which accept labels and
field ids - but NOT field names) ugly to read in multi-language shops.
Meta-Update queries can use field ids, labels, or names.
 
Check out the "Database Reference Guide" manual for where field labels are
stored.  
 
Sorry, I don't know the view tables off the top of my head as I use the API
for that type of info and I've never had to "adjust" views tables for
problems I've had to fix.
