I have been out of the Remedy/ARS game for about a year now so I won't speak directly to that but I have been active in virtualization (VMware specifically) so I will comment on that aspect of the question. As long as the back-end storage is configured to support sufficient I/O (i.e. sufficient number of drives in the RAID group) I don't see why a virtualized solution would run into any issues. I know with VMware you can "reserve" server CPU/RAM resources for a given VM so there should not be any issues there either. Will you take a performance hit compared to a dedicated physical box? Perhaps, but if the implementation is sized and configured properly I doubt it would be noticeable. If you've got the funds to blow, putting the DB storage on its own dedicated 5-6 SSD disk fibre-channel or iSCSI storage array should provide plenty of disk I/O and the host server can handle CPU/Mem resourcing.
