You could try adding a new hidden attachment pool with two display-only
attachment fields over the top of the original.

 

Unhide the new pool when needed and use a set-fields action to set the
display-only attachments to original attachments you want displayed.

 

If you then need users to be able to change the attachments you'll have to
add more workflow to do this.

Since attachment pools take a lot of real estate on a form, in the
aesthetics view point, I tend to keep them in a separate tab or page, and
you can hide and show this tab on whatever conditions you want then..

 

However you are interested in specifically hiding a attachment field within
a pool. I do not have the tool available in front of me to see if attachment
fields are specifically selectable in the Change Field action, but if they
are not, what you could do is build one view where the field is visible in
one view, and another where the field is out of view, and show the
appropriate view in case the Change Field action does not support selecting
a specific attachment field to show or hide..
