I was able to successfully create an ITSM 7.6.4 environment with 3 VMs. 
1 DB (Win 2003 Enterprise 4GB RAM 2 CPU MS SQL2005)
1 APP (Win 2003 Enterprise 4GB RAM 2 CPU)
1 MT (Win 2003 Enterprise 2GB RAM 2 CPU IIS 6.0 with Tomcat 6.30)

Everything works great and very fast. The only issue is to bring those 3 VMs
up with all services. I added all 3 vms to a VM team and I only need to boot
the team

As for specific configurations, I don't recall that I needed to do anything
special for these 3 VMs. Your environment should be flying since Win 2008 is
much better than 2003 in utilizing resources.

Maybe someone tried it before and realized that the application simply does
not perform in a virtual environment
Maybe some specific configurations to be set, any data would be welcomed.
