Just to follow up since I didn't get any answers, I found that I was running into errors, but for some reason they weren't showing up in the log. What was happening is that my custom process would be bypassed and the backup process I selected was being triggered. When I took that out, I saw that it was having problems. It just seems weird that selecting "ALL" for the Approval Debug Type really wasn't giving me all of the details.
Anyway, I'm up and running with no issues now, and I have a custom approval process that delays notifying the approver for 24 hours after the Change Request is moved to "Completed" status in order for them to have a day to sit on it and see if it works right since the odds of users testing things post-implementation are slim.
