Tommy, I'm not running full ITSM, but I've been running fully virtual App/Mid-Tier/DB for many years with little to no adverse affects. I know others in the community have had issues with VM, but I can tell you, that if the VM is run on the right hardware, and properly maintained, and not overloaded, that a virtual solution can and does work.
