We've been running on 2008 R2 for couple of years with no problem. We migrated over to 2008 R2 when we upgraded from 7.5 to 7.6.04. Since then we've increased our web servers from 3 to 6 and all we did was create a new web server and install Tomcat (not packaged one) and then ran the midtier installer. If you have any midtier hotfixes though, be sure to migrate those as well.
