Hi Adrien, This is more like a Maven question than Artifactory.
Basically, Maven resolve dependencies from your local-repo (.m2) first, and only if the artifacts does not exist there, Maven will try to resolve them from the configured remote repositories (Artifactory, central etc..) This behavior can be overridden when providing maven with -U which goes directly to the remote anyway.
