We recently did the same thing. We set up an NFS share for storing artifactory data and backups then sym-linked the relevant folders.
Originally I tried creating a symbolic link to the $ARTIFACTORY_HOME/data/filestore folder leaving the index folders etc on the machine running artifactory, however this did not work, (retrieve worked, publish failed), so I had to create a symbolic link to the entire data folder.
