Asciidoc can't put ids on list items, only on the whole list.  Its one of
the few blocks that don't use it.  Instead use an inline anchor [[entry1]]
on the start of the text,

eg

entry1::
[[entry1]]See <<entry2>>.

What you have done here is make the glossary entry a complete one item
list, and whole lists can take ids.
