This is the strangest thing. After my initial problem with the lists I started testing using the w3m browser to view the html output (quicker than going back to firefox for each iteration). However, the w3m browser displays all the list identifiers, whether alpha or roman numeral as arabic numbers.
So asciidoc is working properly, just my choice of browser was messing with the results.
