It helps if you link to an example document (source and rendered) so we can
see what you're seeing. With that said, I have a pretty good idea of what
you're talking about.

It's very important to understand that once you convert to DocBook, what
happens from there (converting to PDF) pertains to the DocBook toolchain,
not AsciiDoc. That means you have to understand how to customize the
formatting in the DocBook toolchain.

If you are converting to PDF using Apache FOP (e.g., `a2x -f pdf --fop` or
`fopub`), than you have to customize either the XSLT parameters or, more
likely, the XSLT templates themselves to achieve the formatting you want.
The formatting you describe is the out of the box behavior.

It's also possible to get wider tables. But again, that's going to require
hacking on the formatting templates used by the PDF generator. For example,
here's how I customize the tables when creating the Asciidoctor styling for
Apache FOP:

Needless to say, it's complicated (which is why publishing houses charge so
much for this work). That's why I've been working on a programmatic
converter to PDF in Asciidoctor (
https://github.com/opendevise/asciidoctor-pdf). It may require some
programming skills to customize the output, but at least it's a reasonable
amount of work.
