ASSP is unable to only listen to the IP's I have configured in 
'smtpDestinationRT'

If I tell it to listen on port 25, it doesn't work because there's already 
something listening on port 25 although it's on another interface.

I do not understand, what is unclear with this description:

The port number on which ASSP will listen for incoming SMTP
connections (normally 25). You can specify both an IP address and port
number to limit connections to a specific interface. Examples:25,
127.0.0.1:25
