Looking at this page (see the "Gateway Options" paragraph)

it sounds like one will need to configure the "Send All Remote Mail
Through Gateway"
option along with the "Remote Gateway Hostname" one; didn't try it but
reading the doc
sounds like such a setup should achieve the desired result, that is
sending all outbound
email to a given host; as a note, it seems that iMail only accepts a
hostname, so the DNS
or the local HOSTS file should contain an entry pointing to the ASSP box
IP address; also
notice that apparently there's no way to define an alternate port (other
than 25) for the
gateway (aka smarthost - ASSP) so, if ASSP is running on the same box as
iMail you'll
probably need to add at least an additional IP to the box use that IP to
bind the ASSP
relay port and setup things so that the DNS or the HOSTS file will list
that IP with another
name which in turn will be used as the "gateway host" in iMail
