I used to have this happen ALL the time on my server. But never on weekends - because it always seemed to be load-based (i.e. it would happen most often during business hours, when server load was highest).
When I upgraded my server - went from an older bare metal server to a cloud provider, upped CPU capacity, memory and disk speed (from spinning disks to SSD) - it completely eliminated the problem, even though the actual amount of mail being processed has gone up.
