That's the best approach to run a stable server. Use older stable 
software and OS releases which are known and proven to work. Debian 
stable for example. Many gripe about how slow it gets updated and how 
the software is aging (mostly X stuff like browsers... use 
backports.org). But it's pretty much rock solid.

And if you want an ueber stable linux kernel try
