If we're talking SIP traffic, one suggestion would be to look at the RTCP traffic coming back to you from the carrier, and see what type of jitter/packet loss/out of order packets you're seeing. Obviously some (or maybe even most) of that is beyond their control if the packets are going across the internet, but it can be a useful tool to use.
