AFAIK documentation about these PMS systems is usually licensed/behind a
paywall with big NDAs attached.

Search the Asterisk list for Lee Jenkins. He once mentioned that he
wrote a middleware bridge for Micros Fidelio.
Last I heard certification is rather expensive (several thousand US$).
