I've moved back and forth using the OS79XX.TXT file on the TFTP server. Copy the bin file, modify the OS79XX.TXT to have name of the firmware image and power cycle the phone.
The only issue with this process is that once you have the phone running the firmware you want, you need to clear out the file. Otherwise all of your phones will be converted. I have a small lab with a couple skinny and a couple SIP 79XX phones sharing the same TFTP server with no problem. A larger operation would entail a dedicated TFTP server for converting the phones before deployment if you wanted to mix firmware images.
