In Asterisk v1.2.1 check the "featuremap" section of the "features.conf" file. You also need to add the "w" or "W" option to your "Dial" cmd where appropriate. So with the feature mapping below pressing *1 would start recording.

blindxfer => #1                ; Blind transfer, default is #
disconnect => *0               ; Disconnect
automon => *1                  ; One Touch Record
atxfer => *2                   ; Attended transfer
