IAXModem (and the device you're connecting to) should be sending out the echo canceller disable tone (standard tone, I forget the specific standard body # it is referenced in) -- I have my fax machines, security system and stamp machine work all the time this way, and you can see in the dmesg output that the echo canceller for channel 'x' is disabled due to the tone.
