Thanks for the replies, the System command was exactly what I needed and I have now modified my calling plan and it looks like it's going to work perfectly (it's a little late at home to try testing now in the UK).
My next job is going to be getting to grips with the various codec's and working out how to tune Asterisk for the best quality/bandwidth ratio, so I suspect I'll probably be posting a lot more here over the next few weeks pleading for advice. Thanks for the help, after one day I seem to have a functioning VoIP system with ingress and egress pots functionality so I'm very happy.
