Depending on the kernel version and I think glibc version, "ps" output can show one asterisk process or 5 or 6. It doesn't mean that there are six copies running, but rather has something to do with the threading and how ps processes threads vs. processes for printing. Unless there is a real problem, don't worry about how many asterisk processes are showing up in ps and top. I would try enabling the resetinterval parameter in zapata.conf as I'd mentioned earlier.
