I have not found a way to do this via the Polycom configs.  However, what I do is just ensure that the callerid of an inbound call is set so that the recorded number on the Polycoms is a valid callback number (i.e., prepend '9' or '91' depending on the inbound CallerID).

This is not necessarily Asterisk specific but if I have Polycom 301/501 and 601s and want to dial a missed call back, how do I prepend a 9 – can I do this via the polycom config?  I can’t find anything in the docs.
