You can choose various way to record call with snom, the easy one is:
1)leave the default configuration on snom phone,
Function Key -> Record, set it as "key Event" number "F_REC"
2)insert the following line on features.conf
[featuremap]
automon => *1 ; One Touch Record
3)update you Dial command on extension.conf
add wW modifier, example Dial(SIP/100,30,jrwWt)
