I found something in the source about it, but again, since it has been recompiled, this should not have changed. Is there a config file somewhere that I'm too blind to find? Thanks!

I believe that only the CLI console provides color: e.g. asterisk -c.
Connecting to an already-running asterisk process will not provide color: e.g. asterisk -r.
