Another option is to have the user hit the forward button on their phone and manually type in their cellphone number when they're going to be out of the office.

It'll work fine, the Polycom responds with BUSY when the DND button is pressed. Using DIALSTATUS, it'll drop to voicemail and play the busy message if recorded if that's what you have it programmed to do.
