This might sound obvious, but Use rfc2833. But apart from that, you're transcoding from GSM (a lossy format) to g729 (another lossy format) so audio quality is going to be quite poor. Can't you stick to either GSM or g729 all the way? What clients are you using that only support GSM? (and if they're on a LAN why not use G711/uLaw/aLaw?)
