CentOS and RHEL are the same thing. One uses the RedHat trademark, the other doesnt. One is expensive, the other isn't. I don't like to recommend either because I just don't like RedHat's business practices.
Personally I recommend SuSE Linux. OpenSuSE without the GUI installed will do just fine.
